Review:	Vegan, a new cookbook produced in association with the Vegan Society of Australia, is a feast of recipes, which are as healthy as they are delicious looking. Vegan recipes are naturally low in saturated fats and cholesterol and with the emphasis on fresh, unprocessed foods they are highly nutritious too. The recipes make good use of soy milk and other soy products, nuts, beans, seeds and pulses - all essential for providing protein. A few recipes also use some more exotic ingredients like sea vegetables. The book begins with some essential information about achieving a balanced vegan diet and sources of important vitamins and minerals. It continues with a section on useful ingredients and alternatives to cheeses, meat and other animal products, which looks at flavour and texture as well as nutrient content. The main body of the book is divided into several sections: Breakfasts; Light Meals; Main Meals and Deserts. The recipes are a good mix of everyday dishes like Egg-free Omelette and Pizza Muffins: to the deliciously exotic: Wild Mushroom and Pine Nut Filo Baskets, Mild Coconut Curry, Cauliflower and Asparagus Tarts, or Mushroom and Sweet corn Filled Enchiladas. For desert there are even old favourites like Crème Caramel and Black Forest Chocolate Cake. Who said Vegans eat nothing but lettuce and celery sticks! The format is modern, attractive and well set out and includes guidelines on cooking and preparation time. One in three recipes are illustrated with luscious full-page photographs. Inclusion of some kilojoule/fat/fibre/GI analysis would have been a handy extra. With this book you will never have to panic when Vegan or Vegetarian friends drop in – and these recipes are delicious and filling enough for everyone to enjoy. Whether or not you are already following a Vegan or Vegetarian diet, I would recommend this book to anyone who is interested in eating a healthier diet that is both humane and easier on the world’s food resources.
